Busy Day!

I was very busy with work today so I am just getting to post now. This morning, it was quite chilly outside but I was able to get in my run without a problem. I ran my 5-mile route A in reverse. It went well, but I am still going slower than I’d like.

I came home and made my green monster for today. Which was made of 1 cup of vanilla unsweetened almond milk, 1 frozen banana, 1 cup of spinach and a spoonful of vanilla coconut ice cream. It was super yummy.

I also had coffee with half and half + a stevia packet and off I went….

While in between offices today I snacked on a Siggi’s vanilla yogurt.

Which is starting to taste good to me finally! For lunch I had the salad I made last night.

It’s tough to see it’s contents, but it included romaine lettuce, purple and green cabbage, cucumbers, grilled chicken breast and blue cheese. I topped it with some balsamic vinegar and a little olive oil.

While I was at my main office I was tempted again! Someone had received a fresh fruit bouquet that included chocolate covered strawberries. How can I deny myself one of those! I also had a few pieces of my Vivani espresso dark chocolate. That chocolate has really grown on me.

When I got home from work I did my Mari Winsor pilates 50-minute DVD. For dinner I cut up my leftover stuffed pepper from last night and added some more tomato sauce and some cheese.

It was very filling- one stuffed pepper has a lot of sustenance! I used Classico sauce. Ingredients: Tomato Puree (Water, Tomato Paste), Diced Tomatoes (Tomatoes, Tomato Juice, Citric Acid, Calcium Chloride), Fire Roasted Diced Tomatoes (Fire Roasted Tomatoes, Tomato Juice, Salt, Citric Acid, Calcium Chloride), Onion, Olive Oil, Salt, Garlic, Spices, Dehydrated Garlic. Citric acid is a preservative and calcium chloride seems to work as one as well. I need to start making my own tomato sauce!

Alright, well it’s been a long day and the couch is calling…

Stuffed peppers, stuffed me

The trip to Whole Foods was fun and I got to show off a place that I love to shop in. It’s easy to forget that not everyone knows about Whole Foods or has been there before, so it was cool to take some people there for the first time. Anyway, we’re supposed to go to happy hour this evening, well not quite happy hour, but going to a bar to see a friend visiting from out of town. We plan to go after dinner, so when I got home I thought it would be wise to make my lunch for tomorrow so I wasn’t scrambling later or even tomorrow. I threw together a salad, which you will see tomorrow…. While making it I munched on a few cashews that my hubby roasted with some salt and pepper. As if I thought cashews weren’t perfect enough! These were soooo good. I also had a few bites of blue cheese that was going into the salads.

For dinner, the husband cooked stuffed peppers with veal, spinach and cheese.

This was good overall, two veggies (pepper and spinach) and was really filling. Eating a whole pepper is a lot! The not so good news is that he used some leftover prego sauce, which is probably not the best. Also, the meat nor the cheese were grass-fed or organic or any of that good stuff. Still though, a nice and filling meal with comfort food themes.

To know me is to know me

I am very repetitious when it comes to certain things, especially my weekday morning routine and eats. I was able to squeeze in a run this morning before the rain, which was cool. I ran for 45 minutes, which ended up being 4.65 miles. Again, my speed was on the ‘slow’ side for me (9:45 minute mile). I don’t know if it’s me or my nike+ or what. Like I mentioned to start this post I am very repetitious and I run two routes throughout the week, we’ll call them route A and route B. Usually, I alternate them and today was route B. I know exactly when I hit each mile marker and that’s been consistent, it’s my time that has not been. I was glad to get that run in though and had to cut it short because I “snoozed” this morning.

I came home and made coffee and a green monster. I told you I was repetitive! However, in this green monster I threw in a spoonful of Siggi’s yogurt (vanilla flavor). I didn’t notice much of a difference between yesterday’s GM and today. Anyway, the ingredients included 1 frozen banana, 1 cup of chocolate unsweetened almond milk, a cup of spinach and a scoop of vanilla yogurt. Tasty!

Later in the morning I finished up the Siggi’s vanilla yogurt. It went better than yesterday- not much sweeter at all, but maybe I am more used to the consistency now. It also a somewhat sour taste (similar to Greek yogurt). INGREDIENTS: Skim Milk, Agave Nectar, Madagascar Bourbon Vanilla, Live Active Cultures, Vegetable Rennet.

For lunch I had the same thing I had yesterday. Told ya. It was kale salad with bragg liquid aminos (organic kale, organic carrots, organic yellow onion, and bragg liquid aminos), purple cabbage, green cabbage, and leftover steak.

I am getting used to eating salads without dressing and it’s a whole new world. I don’t really miss them or the fat and calorie overload. In a little while I am taking a group to Whole Foods to learn some practical healthy eating tips. Should be fun!

Almost, but not quite

Man. I really tried to not eat when I got home today and I was rather successful… until… I was starting to prepare dinner. This is another time when I find myself mindlessly taking bites of things as I try to reduce my hunger pangs. Like I said, I was able to keep busy when I first got home because the husband had some buddies over and by hanging with them I stayed out of the kitchen. Once I started getting out the food for dinner, I did munch on a few cashews. Not the worst thing in the world though, but a behavior I’d like to reduce.

Tonight was a leftover night. I had a leftover crab cake from Saturday.

I also re-vamped some broccoli cheddar soup that I made last week by adding some more freshly steamed broccoli and some cut up chicken breast (from last night’s dinner).

This soup recipe can be found on my other website if you are interested. It’s really easy and very tasty! I made it before I started this project though so many of the ingredients are non-organic. Next time, next time. Anyway, the veggie quotient was not very high in this meal tonight. There was broccoli and also some carrots in the soup, but that’s really about it (along with green onion and jalepeno in the crab cake if those count). Overall though, today was a decent day. I got in at least 5 different vegetables and had at least one veggie in each meal.

Monday, Monday

Oh, how I never want to see you Monday!

All in all though, Mondays can sometimes be a good thing. How? In the sense that on Mondays I often find myself trying to ‘get back on track’ both with eating and exercising. Mondays seem to be the day when all normalcy returns and the debauchery and sinfulness of the weekend is mediated by alarm clocks, 9:30 am meetings, and the careful preparation of meals in plastic storage containers with all snacks and eats carefully planned out for the day. Also, green monsters return on Mondays and new energy is vested in the work week. Ahh, yes, Monday.

Well, today was no different. I began the day with a relatively ‘easy’ 5-miler. It took me 49 minutes, which is a little long for me- pacing out at a 9:44 minute mile. In weeks before going away, I was running faster than this and I felt pretty good this morning so I was a little surprised by the time, but hey, I’ll take it. The run went smoothly and sometimes that is worth going a little slower.  I came home and made a green monster, using a frozen banana, one cup of chocolate unsweetened almond milk and a cup of spinach.

It was tasty and really hit the spot. I also had coffee with half and half and a stevia packet. Over the weekend I purchased some Siggi’s yogurt and had painstakingly been waiting to try my first one until today. Tina often says how much she likes them and I tried her favorite flavor, orange ginger for a late morning snack.

I have to say it was a little disappointing. OK, a lot disappointing. I don’t know what I was expecting, but the texture really threw me for a loop! It was really, really thick and dry. I think I was still too dehydrated from my run to really enjoy it. Also, the flavor was very subtle and overall it seemed kind of plain. I am definitely going to try to eat this again, as the nutritional content is excellent. I have another orange ginger at home and two vanillas as well. I will try the vanilla one tomorrow and see how that goes. Maybe now that my expectation is in line with reality that will help.

For lunch, I decided to try to utilize the kale salad from last week, which I didn’t like very much at the time because it was really salty. I divided what I had left into two containers and added some purple and green cabbage and some leftover steak from a dinner last week. I sliced the steak really thin to prevent gnawing on any large, dry hunks of beef.

I did not add any other salad dressing or condiments and it had plenty of flavor. It was really filling too!

Today I ate lunch at my main office, since I was there conducting some interviews. Unfortunately, at the main office there is a candy dish and when I walked by it for the fourth time I couldn’t help but to grab these:

Noooooo!

I only ate three of them and they weren’t even that good. Ingredients: Corn Syrup, Sugar, Modified Food Starch, Malic Acid, Artificial and Natural Flavors, Sodium Citrate, and Artificial Colors (Including FD&C Red 40, Yellow 5, and Blue 1). (wikipedia). I don’t know why I get so tempted by this sort of stuff?! These were definitely not worth it either! ugh!

Anyway, after lunch I held another interview. On my way back to my office I stopped to pick up my contact lenses from my eye doctor, which is conveniently right next to a Starbucks. I used to be a major Starbucks fan, but my allegiance has waned over the past year. I think it’s because I’ve pretty much eliminated lattes from my diet and their ‘normal’ coffee is not very good. I received a $15 gift card for Christmas and have only used it once, which in the past would have been unheard of! Anyway, I stopped in there this afternoon and got an iced green tea (unsweetened).

Looks like beer doesn’t it! Haha, now that would have been a nice afternoon delight! Anyway, the iced tea was quite good and I enjoyed it with some peanuts for an afternoon snack.

I hope that by eating these peanuts when I was hungry, around 4:30 today, instead of when I get home around 6, it will help me to prevent the binge I normally go on when I get home. I get so hungry by the end of the day that when I get home I am a bottomless pit and tend to eat way too much. It’s sort of this no-man’s land of eating, between lunch and dinner, and I usually fail miserably at it, usually going to town on handfuls of nuts. I tried to prevent that today, but I am already feeling hungry again… we’ll see how it goes…

Dessert

Well that sweet tooth that I spoke of yesterday did not go away at all. I  had a major craving for something sweet and splurged on an almond and chocolate coconut ice cream bar. Luckily for me, the bars are relatively ok because they are all-natural.

This was a very tasty treat. I bought these over a month ago and this is the second one I’ve had. It’s not my usual style to have such a dessert, but I really wanted it and I tried to do away with any guilt since they are ‘all natural’.

INGREDIENTS: NON-DAIRY FROZEN DESSERT (COCONUT MILK, ORGANIC AGAVE SYRUP, CHICORY ROOT EXTRACT, CAROB BEAN GUM, GUAR GUM, NATURAL COCONUT FLAVOR), CHOCOLATE COATING (BEET SUGAR, CHOCOLATE LIQUOR, COCONUT OIL AND/OR PALM OIL, COCOA BUTTER, SOY LECITHIN, SALT, VANILLA EXTRACT), ALMONDS, TOASTED COCONUT. (turtle mountain website).

I think I am going to laugh every time I see soy lecithin. I knew before even looking at the ingredients there would be some in these.

Sunday’s eats

Today was truly a day of rest for me.. well a day of rest and laundry. Anyhow, breakfast was a near repeat of yesterday the only difference being I used cheddar cheese instead of feta today. I enjoyed that omelet with a cup of coffee with half and half.

Although this was a very filling omelet, my sweet tooth was kicking in high gear and I ended up also having a samoa girl scout cookie.

It was good, but the ingredient list is quite long, which does not forebode good things. Let’s take a look. The ingredients include sugar, vegetable oil, enriched flour, corn syrup, coconut, sweetened condensed milk, sorbitol, glycerin, cocoa, invert sugar, cocoa processed with alkali, cornstarch, salt, caramelized sugar, soy lecithin, dextrose, natural and artificial flavor, carreeganen, and leavening.

There’s that soy lecithin again. From the wikipedia page, soy lecithin’s non-toxicity leads to the use with food, as an additive or in food preparation. It is used commercially in foods requiring a natural emulsifier or lubricant. In the food industry it has multiple uses: In confectionery it reduces viscosity, replaces more expensive ingredients, controls sugar crystallization and the flow properties of chocolate, helps in the homogeneous mixing of ingredients, improves shelf life for some products, and can be used as a coating. In emulsions and fat spreads it stabilizes emulsions, reduces spattering during frying, improves texture of spreads and flavor release. In dough it reduces fat and egg requirements, helps even distribution of ingredients in dough, stabilizes fermentation, increases volume, protects yeast cells in dough when frozen, and acts as a releasing agent to prevent sticking and simplify cleaning. It improves wetting properties ofhydrophilic powders (e.g. low-fat proteins) and lipophilic powders (e.g. cocoa powder), controls dust, and helps complete dispersion in water[1]. It can be used as a component ofcooking sprays to prevent sticking and as a releasing agent.

I still don’t know if that’s necessarily a good thing to be eating, even if it is non toxic. It is in so many foods though, especially sweet ones.

Anyway, I also munched on some more nuts today- cashews and dry roasted peanuts. I got in a 50-minute pilates workout via DVD as well. For dinner I had leftover slaw from last night and some grilled chicken breast.

I definitely foresee some more sweets in my future tonight as the cravings are getting stronger and stronger. I may go for some dark chocolate or some coconut milk ice cream- or both. Ahh! I will try to be good!
